Gluten free ginger snap and sorbet cookie sandwiches

Ok, I have to confess this is not my creation. It is that of my 7 year old son. He made the sandwiches, devoured them and then said “mama, you should put these on your blog.” He was right, of course, and here they are. This has to be one of the simplest and yet tastiest deserts ever.

Ginger snap and sorbet cookie sandwiches

How to make

  1. Take 2 gluten free ginger snap cookies
  2. Smother one with your sorbet of choice (our favorite is raspberry sorbet)
  3. Put the other cookie on top
  4. Eat before they melt, or if you can resist, make a few and pop them in the freezer for the next desert time.
